Why this works

Tempeh is fermented soy, so you get complete protein plus the fermentation byproducts that make its minerals easier to absorb.

Ingredients

  • 8 oz tempeh, cubed
  • 2 tbsp avocado oil
  • 1 large head broccoli, in florets
  • 1 red pepper, sliced
  • 3 tbsp natural peanut butter
  • 2 tbsp tamari, 1 tbsp maple syrup
  • Juice of 1 lime, 1 tbsp grated ginger
  • 2 cups cooked brown rice
  • Crushed peanuts and scallions

Method

  1. 1Steam the tempeh 8 minutes to soften its bite, then pat dry.
  2. 2Sear the tempeh in 1 tbsp oil until golden on all sides, then set aside.
  3. 3Add the remaining oil and stir fry the broccoli and pepper on high heat for 6 minutes until charred but crisp.
  4. 4Whisk the peanut butter, tamari, maple, lime, ginger, and 1/4 cup water into a sauce.
  5. 5Return the tempeh, pour in the sauce, toss for 1 minute, and serve over brown rice with peanuts and scallions.

Steaming tempeh first removes the bitterness people blame the tempeh for. Eight minutes changes everything.
