Spiced Red Lentil and Sweet Potato Stew
Red lentils collapse into a thick, gently spiced stew studded with sweet potato.

Why this works
Red lentils are unusually easy on a sensitive gut because they break down completely, delivering fiber without the roughness of whole legumes.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 1 tbsp grated ginger, 3 garlic cloves
- 2 tsp cumin, 1 tsp coriander, 1/2 tsp cinnamon
- 1 1/2 cups red lentils, rinsed
- 2 sweet potatoes, cubed
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 cups spinach, juice of 1 lime
Method
- 1Cook the onion in the oil for 6 minutes, then add the ginger, garlic, and spices for 1 minute.
- 2Add the lentils, sweet potato, coconut milk, and broth. Bring to a boil.
- 3Simmer 20 minutes until the lentils have broken down and the sweet potato is tender.
- 4Stir in the spinach until wilted and finish with lime juice and salt.
Yvette's tip
Add a spoonful of yogurt at the table rather than in the pot. The live cultures survive when they are not simmered.
