Seared Salmon over Garlicky White Bean Mash

Why this works

Ingredients
- 2 salmon fillets (6 oz each), skin on
- 2 tbsp olive oil
- 3 garlic cloves, sliced
- 1 can (15 oz) cannellini beans with liquid
- Zest and juice of 1 lemon
- 4 cups kale, stems removed and torn
- 2 tbsp chopped rosemary
- Sea salt and black pepper
Method
- 1Pat the salmon dry, season, and sear skin side down in 1 tbsp oil for 5 minutes until crisp. Flip for 2 minutes and rest.
- 2In the same pan, cook the garlic and rosemary in the remaining oil for 1 minute.
- 3Add the beans and their liquid, simmer 4 minutes, then mash roughly with a fork and fold in the lemon zest and juice.
- 4Push the mash aside, add the kale with a splash of water, cover, and wilt 3 minutes.
- 5Spoon the mash onto plates, add the kale, and top with the salmon.
Yvette's tip
Do not drain the bean liquid. That starchy liquid is what makes the mash creamy without any cream.
