Why this works

Oat beta glucan is one of the best studied soluble fibers for cholesterol and satiety, and it works just as well savory as it does sweet.

Ingredients

  • 1 cup quick cooking steel cut oats
  • 2 1/2 cups low sodium broth
  • 1 can (15 oz) black beans, drained
  • 2 oz sharp cheddar, grated
  • 1 tsp smoked paprika
  • 2 eggs
  • 1 avocado, sliced
  • Hot sauce and cilantro

Method

  1. 1Simmer the oats in the broth for 8 minutes, stirring, until creamy.
  2. 2Stir in the beans, cheddar, and paprika and warm through.
  3. 3Poach or fry the eggs to your liking.
  4. 4Divide the oats between bowls, top with the egg, avocado, cilantro, and hot sauce.
