Why this works

Ingredients
- 1 cup quick cooking steel cut oats
- 2 1/2 cups low sodium broth
- 1 can (15 oz) black beans, drained
- 2 oz sharp cheddar, grated
- 1 tsp smoked paprika
- 2 eggs
- 1 avocado, sliced
- Hot sauce and cilantro
Method
- 1Simmer the oats in the broth for 8 minutes, stirring, until creamy.
- 2Stir in the beans, cheddar, and paprika and warm through.
- 3Poach or fry the eggs to your liking.
- 4Divide the oats between bowls, top with the egg, avocado, cilantro, and hot sauce.
