Moroccan Chickpea and Chicken Tagine
Chicken thighs braised with chickpeas, apricots, and warm spices over whole wheat couscous.

Why this works
The spice blend is loaded with polyphenols, and the chickpea and apricot combination gives you both soluble and insoluble fiber in one pot.
Ingredients
- 1 1/2 lb boneless chicken thighs
- 2 tbsp olive oil
- 1 onion, sliced
- 1 tbsp each cumin and ginger, 1 tsp cinnamon, pinch saffron
- 2 cans (15 oz each) chickpeas, drained
- 1/2 cup dried apricots, halved
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes
- Whole wheat couscous, almonds, cilantro to serve
Method
- 1Brown the seasoned chicken in the oil, about 4 minutes per side, then set aside.
- 2Cook the onion 6 minutes, add the spices for 1 minute.
- 3Return the chicken with the chickpeas, apricots, broth, and tomatoes.
- 4Simmer covered for 25 minutes, then uncovered 10 more to reduce.
- 5Serve over couscous with toasted almonds and cilantro.
Yvette's tip
Apricots are doing structural work here, not just sweetness. Their pectin thickens the sauce as the tagine reduces.
