Kimchi and Chickpea Fried Rice

Why this works
Cold rice is resistant starch, kimchi brings live lactic acid bacteria, and the chickpeas and eggs carry the protein load.
Ingredients
- 2 tbsp sesame oil, divided
- 1 can (15 oz) chickpeas, drained and dried
- 3 cups cold cooked brown rice
- 1 cup kimchi, roughly chopped, plus 2 tbsp of its brine
- 1 tbsp tamari
- 4 scallions, sliced
- 2 eggs
- Toasted sesame seeds
Method
- 1Crisp the chickpeas in 1 tbsp sesame oil over high heat for 6 minutes.
- 2Add the cold rice and press it flat, letting it catch for 2 minutes before stirring.
- 3Add the kimchi, brine, and tamari, toss 2 minutes, then stir in the scallions.
- 4Fry the eggs in the remaining oil and set one on each bowl.
- 5Finish with sesame seeds.

Add the kimchi at the end, not the start. Long heat kills the cultures you are eating it for.
