Why this works

Cold rice is resistant starch, kimchi brings live lactic acid bacteria, and the chickpeas and eggs carry the protein load.

Ingredients

  • 2 tbsp sesame oil, divided
  • 1 can (15 oz) chickpeas, drained and dried
  • 3 cups cold cooked brown rice
  • 1 cup kimchi, roughly chopped, plus 2 tbsp of its brine
  • 1 tbsp tamari
  • 4 scallions, sliced
  • 2 eggs
  • Toasted sesame seeds

Method

  1. 1Crisp the chickpeas in 1 tbsp sesame oil over high heat for 6 minutes.
  2. 2Add the cold rice and press it flat, letting it catch for 2 minutes before stirring.
  3. 3Add the kimchi, brine, and tamari, toss 2 minutes, then stir in the scallions.
  4. 4Fry the eggs in the remaining oil and set one on each bowl.
  5. 5Finish with sesame seeds.

Yvette's tip

Add the kimchi at the end, not the start. Long heat kills the cultures you are eating it for.
