Why this works

Blending yogurt into hummus lifts protein without touching the fiber, so a snack food becomes an actual meal.

Ingredients

  • 1 can (15 oz) chickpeas, divided
  • 1/2 cup Greek yogurt
  • 3 tbsp tahini, juice of 1 lemon, 1 garlic clove
  • 1 tsp cumin, 1/2 tsp chili flakes
  • 1 tbsp olive oil
  • 2 eggs, soft boiled
  • 1 cucumber, diced, 1/2 cup parsley
  • Whole grain pita to serve

Method

  1. 1Blend two thirds of the chickpeas with the yogurt, tahini, lemon, garlic, and a splash of water until very smooth.
  2. 2Crisp the remaining chickpeas in the olive oil with the cumin and chili flakes for 5 minutes.
  3. 3Spread the hummus into two shallow bowls.
  4. 4Top with the crisped chickpeas, halved eggs, cucumber, and parsley. Serve with warm pita.

Yvette's tip

Blend the hummus a full minute longer than you think you need to. Texture is the only difference between homemade and good.
