Why this works

Farro holds far more fiber than white rice, and yogurt marinade tenderizes the chicken while adding a small dose of live cultures.

Ingredients

  • 1 1/4 lb boneless chicken thighs
  • 1 cup plain Greek yogurt, divided
  • 2 garlic cloves, grated
  • 1 tsp oregano, 1 tsp paprika
  • 1 cup pearled farro
  • 1 cucumber, diced
  • 1/2 cup kalamata olives, halved
  • 1/2 cup chopped dill
  • 2 tbsp olive oil, juice of 1 lemon

Method

  1. 1Marinate the chicken in half the yogurt with the garlic, oregano, paprika, and salt for at least 20 minutes.
  2. 2Simmer the farro in salted water for 25 minutes, then drain.
  3. 3Sear the chicken in the olive oil over medium high heat, 6 minutes per side, then slice.
  4. 4Toss the farro with the cucumber, olives, dill, and lemon juice.
  5. 5Top with the chicken and a spoonful of the remaining yogurt.

Cook a double batch of farro and keep it in the fridge. It is the fastest way to turn any leftover protein into a real lunch.
