Why this works
Buckwheat is a prebiotic pseudograin, and edamame brings complete plant protein, so this bowl feeds you and your microbes in the same forkful.
Ingredients
- 6 oz buckwheat soba noodles
- 1 1/2 cups frozen shelled edamame
- 2 cups shredded red cabbage
- 2 carrots, julienned
- 3 tbsp tahini
- 2 tbsp rice vinegar, 1 tbsp tamari
- 1 tbsp grated ginger
- 2 tbsp toasted sesame seeds
- Scallions to finish
Method
- 1Boil the soba 4 minutes, adding the edamame for the last 2 minutes. Drain and rinse under cold water.
- 2Whisk the tahini, vinegar, tamari, ginger, and 3 tbsp water into a pourable dressing.
- 3Toss the noodles and edamame with the cabbage and carrots.
- 4Add the dressing, toss again, and top with sesame seeds and scallions.

Rinsing soba under cold water stops the cooking and washes off surface starch, which is the difference between a bowl and a clump.
