Cottage Cheese and Lentil Lasagna

Why this works
Swapping ricotta for cottage cheese roughly doubles the protein per layer while cutting saturated fat, and the lentils carry the fiber.
Ingredients
- 2 tbsp olive oil
- 1 onion, 2 carrots, 2 celery stalks, finely diced
- 3 garlic cloves, minced
- 2 cans (15 oz each) brown lentils, drained
- 1 jar (24 oz) marinara
- 2 cups cottage cheese
- 1 egg
- 1/2 cup grated parmesan
- 9 whole wheat lasagna sheets
- 2 cups baby spinach
Method
- 1Heat the oven to 375°F. Soften the onion, carrot, and celery in the oil for 10 minutes, then add the garlic.
- 2Stir in the lentils and marinara, simmer 10 minutes.
- 3Blend the cottage cheese with the egg and half the parmesan until smooth.
- 4Layer sauce, sheets, cottage cheese mixture, and spinach twice, finishing with sauce and the remaining parmesan.
- 5Cover with foil and bake 35 minutes, uncover and bake 12 more until bubbling. Rest 10 minutes before cutting.
Yvette's tip
Blending the cottage cheese is the whole trick. Curds stay curds in the oven, but blended cottage cheese sets like ricotta.
