Why this works

Black beans are one of the densest resistant starch sources in the pantry, and pairing them with quinoa gives you a complete amino acid profile without any meat.

Ingredients

  • 1 cup quinoa, rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 red bell peppers, sliced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 cup plain Greek yogurt
  • Juice of 1 lime
  • 1 avocado, sliced
  • 1/2 cup chopped cilantro
  • Sea salt and black pepper

Method

  1. 1Cook the quinoa in 2 cups water, covered, for 15 minutes, then rest 5 minutes off the heat and fluff.
  2. 2Meanwhile, heat the olive oil in a skillet and cook the peppers over high heat until charred at the edges, about 6 minutes.
  3. 3Add the beans and cumin to the peppers, warm through, and season with salt and pepper.
  4. 4Whisk the yogurt with the lime juice and a pinch of salt.
  5. 5Divide the quinoa between two bowls, top with the bean mixture, avocado, and cilantro, then spoon over the lime yogurt.

Yvette's tip

Cook the quinoa the night before and chill it. Cooled starch converts to resistant starch, which is fuel for your butyrate producing bacteria.
